In Mexico, in the Jaltenango region, Villacorzo Chiapas, the unique Mexico SHG EP coffee is produced. Growing altitudes of 1,100–1,500 m.a.s.l provides adequate sunlight and high humidity, contributing to the bright acidity and nice body of Mexico SHG EP coffee.

Small family farms, typical in this region, grow mainly Arabica varieties such as Bourbon, Tipica, Caturra, Catuai. The harvest of Mexico SHG EP coffee occurs between January and April.

After harvesting, the coffee berries are hand-pulped, and then the coffee beans are fermented and sun-dried. Finally, the coffee beans are carefully selected according to size during the milling process. Smooth body and bright acidity are typical of Mexico SHG EP coffee. Notes of citrus, chocolate and caramel add a unique taste.
